すっかり寒くなり鍋を求めてこちらにお邪魔。
水炊きの用意が出来るまでに茶碗蒸しが提供され
おつまみとして唐揚げと漬物の盛り合わせを
お願い。
唐揚げは中心部はほんのりとピンクで新鮮な
鶏肉でないと出来ない揚げ方。
衣はカリッとしていて香ばしく肉にはしっかり
と下味がついており歯応えも充分です。
そうこうしているうちに水炊きの準備が始まり
ました。お鍋いっぱいにコラーゲンの塊のような
スープがたっぷり入っており火をかけることで
徐々に溶け出し濃厚な香りが食欲を誘います。
最初にコラーゲンスープの中に潜んでいた鶏肉を
よそってくれました。まずはスープからいただき
ます。塩と柚子胡椒が付いてましたが何も足さずに
充分の美味しさ。次につくねを投入していただき
砂時計が落ち切ったら食べ頃と教えてもらいました。砂時計を睨みながら落ち切った途端、すぐに
頬張ります。そうこうしているうちに野菜類も投入。本格的なお鍋の様相となって来ました。
ここからはパクつくのみ、夢中でいただき鶏肉の
薄切りはしゃぶしゃぶ風にいただきます。
締めはらーめんを選択、相方の要望でトリュフを
たっぷり入れてもらいました。
ただ、さすがのトリュフも濃厚なスープの味わいにはやや苦戦。最後まで美味しくいただきました。
今度はもっと時間に余裕を持ってお邪魔します。

Originally, the event was scheduled to start at 7:30 pm, but I was informed that the previous customer had canceled so I could come early, so I decided to show up at 7:30 pm. I was planning to excuse myself at 9pm, so I was grateful for the suggestion to move the meal forward by 30 minutes so I could enjoy my meal with more time to spare. After toasting with Sapporo Akaboshi, I asked for dried mentaiko and pickled vegetables as an appetizer. Zoni was served before the appetizers. Personally, this is my first time making rice cake this year. I got some for my partner who doesn't like rice cakes, but they were about the size of half a mouthful, so two pieces was just right. Ozoni has its own characteristics, from the ingredients to the soup stock, depending on the region, but what kind of zoni does this one come from? It was light but had a rich flavor and was very delicious. Meanwhile, the knob arrived. This is my first time making dried pollack, but I was surprised at how small it was. However, it has the potential to become a perfect accompaniment to alcoholic beverages with just a few bites. That much amount is enough, and if you have more than that, you may have more than you can handle. The daikon radish leaves your mouth feeling refreshed. The lightly pickled vegetables have just the right amount of pickling, and the crunch of the cucumbers is especially pleasant. Finally, the pot containing the collagen chunks arrived and was heated. Just watching the collagen dissolve is exciting. Once it's completely melted and boiling, the bone-in thighs and breast meat hidden inside are served. After all, meat with bones is the most delicious. Afterwards, when the meatballs were served, my partner, who is a good cook, expertly cooked them with good seasoning. While I was eating the meatballs, the waiter added some vegetables. During cooking, replenish collagen while cooking. Thinly sliced chicken is served in the same way as shabu shabu. Along the way, I added some yuzu and pepper to give it a different taste. Once your stomach is satisfied, finish the meal. Last time I asked for truffles, but I could hardly feel the presence of truffles due to the rich chicken soup, so this time I ordered regular rice porridge. After all, there was a lot of time to spare for 30 minutes, and I was able to enjoy the rice porridge at the end. When I asked for the bill and left the store in a happy mood, the staff came outside and greeted me politely. After all, the attention to customer service is different.
