数年ぶりにやっと再訪できました。
広島の瀬戸内に住む「魚にはちょっとうるさい」友人を連れ3人で訪問。
遠方から来る事情もあり、ＬＯは20：30でしたが19：30に予約し、職人さんの手さばきが見えるカウンター席に通されました。
寿司店では何の知識もないものの、包丁や握りの技が見え、職人さんとの会話もでき、すぐにオーダーができるカウンターが特等席だと思います。
道路拡張のため元の店から30ｍほど東に移転され、ますます老舗の風格漂う外見になられてます。
いつもは（と言っても3,4回ほどしか来たことはありませんが）最初からお好みで好きなネタを握ってもらうのですが、今日はタコぶつと特上握りでスタート。
明石のタコはよくスーパーなどで購入して自宅で調理もするのですが、やはりプロの茹で加減、タコの旨味が濃く、すだちと塩で旨さが引き立ちます。
特上は握り6貫と巻き3貫がいいタイミングで出てきます。
美味しさにつられ、まだまだ食べられるお腹具合だったので、まぐろの赤身、うに（由良産）、あなご棒寿司…を何種類かの冷酒と共に堪能しました。
「寿司」という料理はもちろんネタの新鮮さや美味しさが命なのでしょうが、シャリとの絶妙なバランス加減こそが真髄なのだと、ここの寿司は感じさせてくれます。
最後に時間が遅かったためか品切れだった鯖の代わりに、鰯のにぎりをいただいたのですが、安い魚の代名詞の鰯ですら一流の技で握られると、やや次元の違う逸品に昇華されます。
自分の好きなネタでなくとも、驚きや感動の旨さを体験させてくれる、正に「明石を代表する名店」だと恐れ入る次第です。
そして老舗であるのに、ご主人やスタッフの皆さんの接客が丁寧で素晴らしく、その驕りのない姿勢が、名店たる所以ではないかと一人のファンとして感じます。
今回予約時間が遅く、ラストオーダー20：30をまわってしまっても気持ち良く注文を通してもらえ、逆に団体予約があったためか提供に時間がかかったことにお詫びしていただき恐縮でした。
数年に一回しか行けないのですが、間違いなく私は「菊水鮓」の大ファンです。
