■The third-generation owner carefully grills the eel over binchotan charcoal, taking into account the quality of the eel and the temperature that day. ■The method of grilling and cutting is Kansai style. ``Jiyayaki'' means opening the meat from the belly, pounding a long metal skewer into a fan, and grilling it to white. Then, it is a method of dipping it in sauce and grilling it.
