From Sasayamaguchi Station, it is about a 20 minute drive, or about 4,000 to 5,000 yen one way by taxi. Bicycle rentals in front of JR Sasayamaguchi Station: electric bicycle 1,000 yen per day, regular bicycle 800 yen. You can take a bus from the east exit of Sasayamaguchi Station as close as Sasayama Homei High School, but it is 4.4km from there to the shop, so we do not recommend taking the bus. |

ChefShinnosuke Matsuda - A soba noodle lover with a penchant for hospitality
Born in Osaka Prefecture in 1984. The young second-generation owner took over the restaurant from his father, who moved deep into the mountains after being inspired by the worldview of "From the North Country." While following in the footsteps of his predecessor, he is also devoted to researching his own soba. He once entered the Buddhist priesthood, but was inspired by the happy smiles of customers he saw while helping out at the restaurant, and decided to pursue the path of soba. He is a soba craftsman whose foundation is the spirit of hospitality. He aspires to provide "soba-goto," which is modeled on the tea ceremony, or "chaji," which he has been practicing since middle school.

The soba noodles are made using super soft water from Tarumi Onsen in Kagoshima Prefecture, and depending on the temperature of the day, the mix of three types of domestic buckwheat flour, the thickness of the noodles, and even the way they are kneaded are all changed. Of course, the broth is also exquisitely adjusted to match. All three types of soba noodles served in the course are highly fragrant, and the original flavor of the buckwheat stands out. The dishes are also well-balanced and skillfully made to make use of local ingredients, and you will be amazed by the elegant and powerful flavor. Enjoy this bountiful soba kaiseki meal as if you were surrendering yourself to nature.

As you travel deep into the mountains, you will forget the hustle and bustle of the city and arrive at a sukiya-style building that is a departure from the country. There, you can hear the chirps of birds and the murmuring of the river, and the changing of the seasons unfold beyond the glass windows. It goes without saying that the rich environment that surrounds this building enhances the flavor of the soba even more. Matsuda's attention to detail and sense are also evident in the dishes and chopsticks that enhance the beauty of the food, such as the custom-made baskets for serving the soba, the bamboo baskets for holding the food, and the lacquer bowls.
Surrounded by nature, the soba noodles are a pristine sight, and the food is seasonal. Enjoy the intricate yet simple, profound taste.
