Yuji Okamura is our head chef. After graduating from culinary school, he moved to Tokyo to gain experience at Ryokan and hotels. For over 20 years, he honed his skills at famous restaurants in Ginza and famous Kaga cuisine restaurants, and returned to his hometown of Morioka City, Iwate Prefecture in 2023. He has a new perspective on local ingredients and cuisine, and his delicate techniques and seasonings are a combination of his own experience. He is a talented chef who has served many famous people with food. Please enjoy this sophisticated masterpiece that shines through the craftsmanship.
