八寸は季節の物で。
鱧は全て骨抜き!この技術を持っている職人は数人との事。
骨抜き鱧はかますのような食感と味。
カワハギは海苔巻にしてイクラをトッピング。
松輪の鯖はほんのり酢締め。
最近よく聞く羅臼の鰤は脂ノリノリ。
香箱蟹もやっと出回り始めましたね、
大好物!
すき焼きは泡立てた玉子につけて。
締めは蕎麦。
