ChefChef Ishibashi with rich sensibilities and solid experience
Kaito Ishibashi Born in 1985 in Ichikawa City, Chiba Prefecture. After training at an Italian restaurant in Chiba Prefecture and Tokyo for seven years, he moved to Italy at the age of 27. After training at the 1-star Taverna Estia in Campania and Ristorante Mocajo in Tuscany, which is known for Game Meat Dishes, he returned to Japan. Joined the company in 2014. Appointed as chef (chief chef) in 2017. The restaurant uses many Japanese-style meal ingredients, incorporates elements of Italian cuisine, and serves dishes that bring out the individuality of the ingredients.
