GoToイートを利用して、かねてから行きたかったこの店に夫婦で行った。
感染症対策は、もともと個室なのを更に人数を半分にしたり、空気清浄機を設置したりと、他店以上にしっかりしていると感じた。
古い雑居ビルの地下なので、入店まではドキドキするが、中は綺麗で、装飾なども雰囲気が良い。
ご夫妻で切り盛りされていることもあり、完全予約制だが、ご主人から話を伺ってわかった。ご主人曰く、フグを美味しく味わうには、捌いてから熟成させる期間が必要なのだそうだ。
今回は養殖フグコースにしたが、養殖でも上質
に育てられたもので、味は抜群！
厚めに切った刺身は、しっかりと味が伝わる感じ。
別注文した白子も美味しかった。白子はご主人がベスト調理方法と考える、炙って塩で出してくれたが、茹でてポン酢より確かに良かった。水分が絞られて味が濃くなっていた。
１番感動的だったのは、別注文の唐揚げ！。
他で食べたのと違って、白身のフグの味が濃く、身に弾力があるのが驚きでした。身が硬いのでなく、ほんと押し返してくる感じがあるんです。
1度は食べていただきたい。
コロナ禍で老舗も店をたたむところがあるご時世だが、ぜひまた食べに行きたい。
