A soba restaurant on the way up the hill from Sakuradai intersection in Aobadai. I visited alone for a daytime drink on a holiday. I was shown to a counter seat. It's a busy place, as it's in Donuts Town. It seems that the owner is the only one doing the cooking. On the day, I remember that there was a woman who was in charge of the accounting and customer service, and another woman who was mainly doing the washing up. The next customer who came in was told that the restaurant was full, but they said they would wait. It was busy and they seemed busy again. Thanks to that, I was able to take my time looking at the menu. I thought I could enjoy the soba appetizer at a leisurely pace, so I ordered the following. ●The finest tofu (500 yen) ●Grilled miso (450 yen) ●Seiro (1000 yen) ◯Medium bottle of beer (700 yen) ◯Nabeshima (950 yen) For me, the soba appetizer I chose from the recommendations on the menu was a big hit. First came the grilled miso on a rice scoop. It was fragrant, with crushed buckwheat seeds and walnuts. It wasn't too salty, just right. I like it. If I were to be greedy, I honestly thought it would be nice if the tofu came first since I was drinking beer. I later understood why it didn't come. After the previous customer's soba was served, the owner chopped the green onions rhythmically. It was probably a condiment for the tofu I ordered. Next came the finest tofu. This is the finest tofu from Takahashi Tofu, which is familiar to Aobadai residents. You can't go wrong with it. It's delicious as it is, with salt, condiments, or soy sauce. If you eat it as it is, it feels like a snack. I enjoyed the change in taste in my own way. It's so delicious that I thought it was cheating. I like it. I'll visit Takahashi Tofu soon. After finishing my beer, I ordered Nabeshima, which appeared next in a lacquerware cup and a sake cup. Cute♡ I was able to enjoy a leisurely lunch drink at the counter by myself and watch the owner's work. Very serious. I felt that they were very sincere. They are committed to providing the best flavors, freshly made ingredients, and freshly boiled ingredients. On the counter, there is a stone mill and buckwheat flour, which are symbols of this. But their commitment doesn't end there, they also toss the scallions as a seasoning each time. In addition, they grate wasabi. Freshness is key when it comes to wasabi. Although it is coarse, the freshly grated wasabi has a mild spiciness but a sweetness that I really like. This takes time. The words "diligence and diligence" came to mind. They don't cut corners. I think it's wonderful. With about half a cup left, I take one last bowl of 100% buckwheat noodles. It's a little flat, and you can see a few stars. Time to inhale. You can also smell it. Just like that. Salt. With the spicy broth. There's a pleasant resistance when you chew it. And the flavor of the buckwheat. But it's not mushy. It's pleasant to slurp it just like that. I personally felt that the spicy soup emphasized the bonito flavor. I also liked this one. The soba soup was thick and rich. To be honest, I felt that the operation was a bit awkward. But I think that's because they are pursuing deliciousness. I was a little worried about Fried food because I think they need to be more careful.
