Food The original taste of soba. Attention to detail such as the hardness of the noodles and the soup stock
By making our own flour in-house and immediately rolling it by hand, we deliver the aroma and taste of freshly ground coffee to our customers. After boiling the zaru soba, wash it under running water and soak it in ice water to create a slightly firmer and chewy texture. For the soup stock, I purposely used whole soybean soy sauce instead of dark soy sauce, making it mellow and pleasant to the touch. We also recommend eating it with salt, especially during the new soba season. Please let us know if you would like to change the hardness of the noodles, the thickness of the hot soba/udon soup, or changing the seaweed to salt.
