平日のランチに訪問。
久しぶりに鎌倉にやってきたが、これといって目的はなくこの店にランチを食べに来ただけである。
店名が気になっていたので調べてみたところ、Fiertéというのは、フランス語で「誇り」を意味するようだ。
予約時間の10分前に入店、カウンターに案内される。
予め予約しておいたコースの流れを説明してもらい、3品のワインペアリングとシャンパーニュを注文。
先ずはシャンパーニュでスタート、青リンゴのようなスッキリした酸で軽い味わい。食事前にはちょうどいい一杯。
ここからコースが始まる。
トマト/パプリカ/アーモンド
サクサクの生地にトマトの酸味とアーモンドの食感のアクセントが良い。
蕪/赤海老/ライム
蕪の甘みが強く、それでいて海老の旨みを引き立たせる。ライムの酸味が後味をさっぱりとさせてくれる。
レンズ豆
こちらは超濃厚なスープで、個人的に一番感動した一杯だった。レンズ豆ってこんなに濃厚で凝縮した味だったか
と驚くくらい旨みの詰まったスープだった。
牡蠣/イベリコ豚/ピーカンナッツ
牡蠣の甘さと旨味、イベリコ豚のチョリソーで酸味と辛味を加えて、ナッツの食感も相まって複雑ながら完成された一品になっている。
天然真鯛のソテー
20日間熟成した真鯛を皮目がパリッとなるように押し付けながらソテーしつつ中はしっとりとした仕上がりになっており、
なんとも言えない美味しさ。
山峰豚 肩ロース
低温調理したみたいな柔らかい触感と旨味の凝縮された豚肉は噛みしめることに旨さが爆発した。
オレンジのソルベ
オレンジのソルベの下にはコーヒーのムース、金柑、ヘーゼルナッツが敷いており、酸味を主体としながらも奥行きのあるデザートになっている。
お茶菓子
食後にエスプレッソを頼んで一緒にいただくお茶菓子3品は、一つ一つにたくさんの工夫がなされており、それぞれがメインをはれるレベルだった。
全体を通して、素材の味を生かされており、どの皿もレベルが高かった。
ワインのペアリングも料理と相性が良く、コストパフォーマンスにおいても申し分なかった。
