たまい通り、ウエストキャニオンビルＢ１Ｆです。
階段を降りてすぐ左手の小さめの入り口を入ると、４席のテーブル、奥に厨房を囲むようにカウンター６席、入って左に２人掛けのテーブルが５つ並んでいます。
こじんまりとした店ですが、ちょっと渋い感じで落ち着いた良い雰囲気です。
カウンターの中の料理人は、ちょっと強面で話しかけづらい雰囲気ですが、慣れればいいオヤジぶりを発揮します。
対照的に女将さんは、丸顔の可愛い感じで、和服姿がたしかに『ちょっと色っぽい』です。
料理は、なすび屋とゆうわりには鰯にこだわりがあるようで、種類も豊富です。
鰯とゆう魚はかなり料理人泣かせの魚で、脂が多いのですがその脂が不飽和脂肪酸を多く含むので健康には良いのでしょうが、すぐ酸化して生臭い酸化臭がでます。
したがって常に新鮮さを要求されますし、小骨が多いので処理に手間がかかるうえに、近海で沢山獲れる低級魚なので実はそれほど高い金が取れないんです。
チェーン店で鰯をほとんど出さない理由もその辺にあるんですが、あえてイワシで勝負するとゆうのは、なかなか見上げたもので、メニューに金運つくねを見なければとても『たまい』の系列店とは思えません。
イワシ以外にも、一応店名にもなっている、なすを使った料理もいくつかありました。
また旬の素材にこだわった物や、今回は皮はぎの薄作り、肝付きを頂きましたが、質的にはもうひとつな感じでしたが丁寧な仕事はみてとれました。
お薦めの白レバーは自家製のスモークがしてあったり一手間掛かっています。
しいて言うなら、物によってかタイミングによってか品出しが遅くなるのがちょっと気になりました。
居酒屋としては調理も丁寧で味もそこそこ美味しいし、価格も含め全体的に一定のレベルの高さを感じさせます。
なによりも、酒の無くなるタイミングを見逃さずに、料理の薦め方から、料理に合わせる酒の薦め方まで、女将さんのさり気無い気使いが心地よいお店で、カウンターに常連と思しき客が多いのもうなずけます。
あれは皆んな、惚れてるな！
