...business for 20 years, makes hand-made noodles using soba mainly from Aso and underground water from Aso Kuju. Grinding the noodles in the restaurant's own stone mill, you can enjoy the delicate aroma and flavor of the original soba. You can choose between "Tono Soba", which is ground in a stone mill after removing the husk, and "Tono Soba", which has a glossy, transparent, and chewy texture with the husk still on. Neither soba is made in advance, and they will make more as soon as they run out, so you can always enjoy freshly made noodles. The interior of the restaurant is a modern Japanese style that has been modernized from an old house.
