祇園で好評を博した「ほりべ」が屋号を改め「研覃ほりべ（けんたんほりべ）」として烏丸エリアで再出発。町家を改築し坪庭を配し、観光客にとっては堪らない誂えです。それでいてしっかりと1ツ星を獲得しているのが素晴らしい。
店内はカウンター席が主軸ですがダイニングにテーブル席と、奥の奥には個室があり、個室は完全シークレットな設備で秘密の会合に良さそうです。
堀部努シェフは21歳から祇園でそのキャリアをスタートさせたという祇園オブ祇園な漢。それでも物腰は柔らかで一見客にも優しく接して下さります。
ビールは千円を切り、日本酒やグラスワインも千円そこそこといったところ。このクラスの日本料理店としては良心的な値付けでしょう。
まずは氷に覆われた水無月豆腐から。6月に食べる無病息災の願いを込めた縁起物であり、強めのお出しとじゅんさいでヒンヤリとスタートです。
お凌ぎにホワイトアスパラガスの飯蒸し。クタクタと柔らかいホワイトアスパラガスは、フレンチやイタリアンの極太モノとはまた違った趣があり優しい味わい。キャロットラペのようなものはバチコであり、酒の進むお凌ぎです。
お椀はハモの葛叩きに青ゼンマイ、賀茂茄子。スープが綺麗な味わいで、何かのウェブサイトによれば「千利休も愛したといわれる名水“柳水の水”で出汁を取った」そうです。ちなみに千利休はその芸風と語感から痩せっぽちの老人を想像しがちですが、あの時代で180センチ以上あった大男ですこれ豆な。
お造りはタコ。ネギ塩ダレ（？）で食べると言う焼肉屋のような調味ですが、これが中々、いやかなり美味しい。タコの新たな可能性を見出した瞬間です。
こちらのハモは焼霜仕立てで頂きます。浮袋など普段口にする機会の少ないものまで試すことができ楽しい。
八寸は全体像を上手く写真に残すことができなかったのですが、うちゅくしい三次元でした。味わいについても上々で、とりわけ京都の牛の冷しゃぶがマジで旨い。まるで和風のタルタルステーキである。
琵琶湖の鮎。ついさっきまで水槽で生きていたやつです。じっくり炙ってひとつはそのままで、もうひとつは蓼酢で頂きます。
お鍋ではフカヒレをバリバリ炊いたんがやって来ました。中華風の趣きで面白い。ずいきとの取り合わせも不思議と合っています。
お口直しの冷たいお鉢は高野豆腐。これが高野豆腐かと思うほどトロトロとしており、高野豆腐業界の新機軸と言えるでしょう。〆のお食事は炊き立ての白ゴハンに天然の鰻を焼いたん。東京の日本料理店なら目玉商品でドヤリング間違いなしの食材がサラっとゴハンのお供に出てくる街、京都。
お漬物も丁寧に仕込まれており、とりわけ水ナスの瑞々しい口当たりが堪りません。
水菓子は宮崎産のマンゴー。シュワシュワしたジュレ（？）もかかっており、夏の原宿でバカ売れしそうなコンセプトです。もひとつお菓子に葛焼き。シンプルな甘味ですが上品な味わいで、しっとりとした口当たりが後を引く美味しさです。
以上のコースが2.1万円で、軽く飲んでサービス料やらなんやらで2.6万円。京都の繁華街で真っ当な日本料理を食べてこの支払金額はリーズナブル。東京のちょづいた店であれば4-5万円は当たり前の世界線。今度は奥の個室でコッテコテの接待とかやってみたいな憧れる。
