ChefYoshio Maruyama: A craftsman who approaches food with gratitude
Born in Kyoto Prefecture in 1949. The eldest son of a fish merchant, he studied under Urasenke Honorary Master Nishiwaki Soken in 1967 and apprenticed at Kodaiji Doi for 10 years. He then worked at the long-established restaurant Kikunoi in Kiyamachi for seven years and Wakuden in Kodaiji for five years as executive chef. He opened Gion Maruyama in 1988 and Kenninji Gion Maruyama in 1998. The profound beauty of Kyoto shines through his high level of skill and artistry, cultivated through years of study, and his unwavering hospitality.

The interior design, which has been carefully designed to allow you to feel nature, from the small garden to the scrolls and floral arrangements, offers comfortable hospitality. Maruyama's beautiful cuisine is as if a soul is inhabiting every corner of the dish, from the ingredients to the tableware and decorations. Bamboo shoots and roe in spring, conger eel and sweetfish in summer, sweetfish with roe and matsutake mushrooms in autumn, and Matsuba crab and puffer fish in winter are all grilled over charcoal and served right in front of the guests. Maruyama regards Kyoto cuisine, which appeals to all five senses - rhythm, light, sound, aroma and taste - as a comprehensive art. While valuing the traditional Japanese concepts of "hare" and "ke" and the customs of the four seasons, he continues to evolve Kyoto cuisine with ideas and methods that are not bound by conventions.
