Located in Maruyama Park in Kyoto, this restaurant was founded 300 years ago. Imobou is a "taste of a meeting" made by cooking the mountain delicacy "Ebiimo", a Kyoto vegetable, and the seafood "Dried
... cod" from Hokkaido in a copper pot for an entire day. The lye from the Ebiimo softens the dried cod, and the collagen from the dried cod prevents the potato from falling apart, creating a synergistic effect in which the two dishes help each other, leading to the restaurant being called "cooked by husband and wife."
