夏鹿を求めて

8月に入ったある日、こちらのオーナーシェフ神田さんから「最高の夏鹿が入りました」との連絡をいただき、これは行かなければと思い伺いました。

しかし京都も暑い暑い。先ずは赤星で乾杯です。

夏鹿の焼く前のものを見せていただきましたが、見たことのない肉質と言いますか、サシの具合が凄いというか、鹿肉には見えないくらいでした。

そして最初に前菜4品をいただくのですがこれがまた美味い!

玉ねぎのタルトとデザート鬼灯と〆鯖のブルスケッタ盛り合わせやパリッと焼かれた鰻の下にマッシュポテトを敷いたもの、雉と若松茸の土瓶蒸し仕立て、そして夏鹿の炭焼。

やはり夏鹿は最高でした。この時点でワイン1本空きました。
