もともとジビエには興味があったけど、先日根室で生鹿(一度も冷凍していない鹿の意)を食べてしまってから俄然興味のあるジャンルに。
京都ではいつも日本料理、京料理、割烹的なところにお邪魔することが常だけども、今回はそんな流れもあってこちらで1人飯をいただくことに。
最初に4品があり、その後は一口サイズの料理を食べ放題というこの価格帯では聞いたことのないシステム。期待と不安と半々でしたが…
最初の4品、の前のパン(ブリオッシュ)が先ず美味しい。熱々で持てないもちもちさに燻製バターでもうやられちゃう。鹿、月の輪熊、鰻、鹿の流れで提供いただく4品も期待通り。特に月の輪熊のしゃぶしゃぶは力強くて繊細で記憶に残ってる。
追加もたくさんいただきましたがこちらは雉炭火焼きが圧倒的。店内もくもくでドアを開けるほどの煙が立ち込める中、出てきた雉の気品の様な凛とした味ときたら… お酒も進んでしまいます。
ワイルドなジビエでは無くて、料理素材としてのジビエ。こんな捉え方もあるんだな、と勉強にもなりました。
