The seasonal vegetables, mainly local Kyoto vegetables, are selected by the head chef himself. River dishes such as ayu and rockfish are purchased fresh from the day's wild fish and are allowed to swim in a tank in Kibune's river, so you can enjoy the freshness of the fish that have been frozen in the clear water. Botan nabe, a winter specialty, uses only the premium quality shoulder loin, an expensive part of the boar meat, sourced from a local master hunter, so you can enjoy the taste of lion meat unlike any other.
