We carefully examine the production areas such as Shizuoka, Aichi, and Tokushima from time to time, and purchase the best and most delicious eels of the season, still alive. The eel is ``jiyaki'', which is grilled while dipping it in sauce, resulting in a fragrant and plump eel.

At our restaurant, we use a homemade sauce made by slowly simmering hansuke (eel head) in soy sauce, sake, sugar, mirin, etc. for over an hour. Sweet sauces are the norm in the Kansai region, but our sauce is characterized by a sharp taste that is less sweet. We continue to carefully preserve the secret flavor passed down from our predecessors by adding to and adding to it.
