The Tsushima Current, which branches off from the Kuroshio Current, one of the world's largest currents, flows through the Goto Sea and the East China Sea. Furthermore, Sasebo is home to a vast continental shelf with a depth of 100 to 200 meters, which is said to be the best fishing ground, and the proximity of the fish is directly linked to the freshness of the fish. The owner personally goes to the Sasebo fish market, where freshly caught seafood is lined up, and carefully selects the ingredients. There's no way this won't work!

The ``Nigiri'' we received during our interview started with flounder, which had a plump flesh and a soft, gentle sweetness, and then sardines with an exquisite finish that melted in your mouth. The mantis shrimp, which has a strong flavor like the best of shrimp and crab, are all exquisite! What particularly impressed me was the piping hot grilled eel with fragrant fat, and the soft and odorless whale meat, which was firm and lean. Despite the interview (tasting), I couldn't help but add to the sushi that was created by maximizing the potential of the ingredients.
