I came to Sasebo. I have been to Shimabara in Nagasaki Prefecture several times, where I have clients, but this is my first time in Sasebo. I arrived at this restaurant just before 6pm because I had looked at the online information the day before and the pictures of the food looked delicious. I'm seated at the counter. First of all, I ordered sashimi, ``horse mackerel'' and ``squid'', but it seems that ``squid'' is not in stock, so when I asked for a recommendation, I was told ``hirasa''. It seems that there are various names depending on the region, and when I googled it, it seems to be "hiramasa". It is a popular fish for fishing, similar to yellowtail and amberjack. I asked without hesitation. Also, ``raw vegetable salad'' and ``draft beer''... First, the draft beer and ``appetizer'' arrived. It is a delicious meat and potato dish that is well-seasoned. You'll quickly finish your meal, and your expectations will increase for the rest of the dish. Next, a hearty "raw vegetable salad" arrived. There's a wide variety of vegetables, including onion slices, kaiware, and yam, and the homemade Japanese dressing makes the salad even more delicious. And the exciting sashimi has arrived. The ``horse mackerel'' is the crispy one that was swimming in the fish tank until just now, and the ``hiramasa'' has 6 thick cuts on top. The ``horse mackerel'' has a fresh, plump texture that I enjoyed paired with ginger and green onions. ``Amberjack'' has a chewy texture and luxurious taste. I ate everything, including the lemon and the pieces of sashimi (lol) From here on out, the mom came out to the hall from time to time, and we started to communicate...Next, when I asked for a ``highball,'' my new giraffe, ``Riku,'' was there. It is recommended. It was definitely easy to drink and had a delicious taste. I then ordered the `` Grilled skewer'' that I was looking forward to when I saw the menu. My stomach already feels pretty good so I decided to pick five. Choices include ``skin'', ``sand zuri'', ``liver'', ``green onion'', and ``tsukune''. When I ordered ``salt'' for everything except ``liver'', my mom said ``sauce'' is recommended for ``tsukune'' and confirmed the order. And what arrived was the delicious-looking and voluminous dish shown in the photo. From the front, there are 5 pieces: ``skin'', ``negima'', ``sunazuri'', ``liver'', and ``tsukune''. All of them have firm flesh and are satisfying to eat. The dishes that had a particular impact were "lever" and "tsukune". The ``liver'' seemed to be a little rare, but apparently the mother had carefully ``drained the blood'', so even though it looked rare, there was no smell or harsh taste, and it had a delicious taste that I had never experienced before. "Tsukune" is not a dumpling, but a "rectangular" konnyaku shape, and is quite heavy and voluminous. It also contained plenty of green onions and was unique and delicious. It seems that mom's "commitments" are sprinkled throughout in the ingredients and cooking methods. I feel like no matter what I order, I can't go wrong. After eating and drinking all this, I got change for 5,000 yen. When it comes to ``sashimi'', if you ask for the ``recommendation'' of the day, you'll be able to find fresh and delicious fish like I did.
