米は新潟津川産、水は五泉市菅名岳の吉清水で米を炊き阿賀野川の恩恵を受けた土を安田焼(渡部窯)の器と新潟笹川流れの塩、五頭山の麓で製造される醤油、亀田藤五郎梅に味噌と料理酒、新潟地元と阿賀野川の恵みを受けた(水・米・土)と味の一体感を引き出す為にお酒は麒麟山酒造と寒九の水、近藤酒造の菅名岳を使用し阿賀の恵みで統一感を演出しました。魚は新潟市場と粟島漁港から日本海の幸を仕入し仕事と道具は江戸前の心意気
