Environmental and social initiatives

Reducing Food Waste

We are registered as a certified Okinawa Ingredient Store in Okinawa Prefecture. We are actively developing menus using Okinawan ingredients and promoting their appeal. By using locally sourced ingredients, we strive to purchase safe ingredients and appropriate quantities that allow you to see the faces of the producers.

Using Sustainable Ingredients

I am volunteering to participate in a "taste class" sponsored by the French Embassy in Japan. In addition to the four basic tastes (salty, sour, bitter, and sweet), we teach elementary school students in the prefecture about the fifth taste, umami, to make them aware of taste and to enjoy food. Through these activities, we are working to make children aware of the sustainability of their future food.

Community Contribution Activities

He appears on TV and NHK Okinawa and regularly introduces easy French recipes using Okinawan ingredients. This year is the 14th year since 2010, and the number of appearances has reached 85 times. Using seasonal Okinawan ingredients and cooking utensils at home, we add easily available ingredients to create a French-style meal. We have added innovations to our recipes to help people practice local production for local consumption.

Information registered with the restaurant is posted here. Please contact the restaurant for more information about the initiative or if you have any questions.

Check out Tabelog efforts.
