A must-try dish is ``Salt Tataki,'' in which carefully selected bonito is grilled at a high temperature and served warm with just salt. Serve with squeezed citrus fruits and condiments of your choice. This is a privilege only allowed for fresh raw bonito, so quantities are limited. Reservations are recommended.
