The bluefin tuna is sourced from a well-known tuna specialty store, and Other seafood is carefully selected to be fresh by a reliable connoisseur. We are particular about everything, including the combination of red vinegar and sushi rice, the degree of cooking, how to handle the ingredients according to the ingredients, the balance between sushi and toppings, the form of the nigiri, and the aging of the fish.
