素晴らしいセンスと技術と探究心
いやー良い店ですねー！
素晴らしいの一言に尽きます。
大将のセンスと技術と探究心に脱帽です。
広めの椅子なので、ちゃんと一品一品に向き合えます。
気さくな大将なので、お話もしやすく、緊張も解きやすい。
ビールグラスはうすはり。
お箸も先の細いお料理を邪魔しないものを採用されています。
お猪口は江戸切子を揃えておられ、選ぶのも楽しみ。
そして肝心のお料理は、一品一品拘りがあり、そして全体としての流れも、温度も計算された一連のコースとしての完成度も素晴らしかったです。

ハリイカが少し分厚すぎたのか、隠し包丁が浅かったのか、チューイーだったのと、マグロの中トロが少し仕事し過ぎ感があって何となく違和感があったかな。
それ以外は、どれもこれもめちゃんこうま〜い！！
鰤も、鮑も、鰆の粕汁も、鰻も、カンパチも、煮穴子も、めちゃんこうま〜い！
温度と時間で酢の入り具合が変わる為、ネタに合わせてシャリもその都度違うものに。
タコはめちゃくちゃ柔らかく味もしっかり感じられたのですが、大将が自ら考え出した方法で柔らかくしたのだとか。
どうすれば美味しく提供出来るのか？を普段から考えられているのでしょう。
そしてそれを実現できる技術や追求できる探究心、それを表現できるセンス。
大将すんばらしいっす！！

昨年の秋に伺って以来、約半年ぶりの訪問となりました。
