Food We convey the producers' thoughts (stories) through our cuisine.
The chef is particular about using ingredients with a story behind them, and he personally visits and meets producers all over Japan to deliver them directly to him. These ingredients are filled with the feelings of producers from all over Japan, and he combines these with the cooking techniques, mainly French cuisine cuisine, that he has cultivated over the past 20 years working in Michelin-starred Restaurants in France and Restaurants in Japan to create dishes that are born from a completely new perspective, which he prepares at the counter.

ChefOwner chef Shinji Inoue
Born in Saga Prefecture. Graduated from Nakamura Culinary and Confectionery College in 2002. Trained at Mikuni Cote d'Azur (Yokohama) and Hotel de Mikuni (Yotsuya, Tokyo) run by Kiyomi Mikuni from 2002 to 2009. Trained at star-ranked Restaurants in France from 2009 to 2010. Head chef of Aqua Planet Brasserie & Wine Cafe Buzz Umeda store in Mie from 2010 to 2021. Opened Infino in Kitahama, Osaka in March 2022.
