...the oil, temperature, and frying time according to the season and temperature, which is truly the skill of a skilled craftsman. Since the frying area can be seen well inside the restaurant, one of the pleasures is being able to enjoy the sound and aroma of the kushikatsu being fried in a very realistic way. We go to the market every morning to purchase fresh ingredients that we have carefully selected. Some of the menu items are seasonal and can only be eaten now!
