Flour milling is carried out every day at Wabisuke Shukugawa. Did you know that freshly peeled buckwheat is green? We make three types of soba (finely ground, coarsely ground, and thickly sliced), each with a slightly different thickness and width.

■The cold soup uses thickly shaved first-class Rishiri kelp from Makurazaki, which is caught only by pole-and-line fishing.
