ChefHirotomo Sunada: Reliable skills honed through travelling around the world
Born in Hyogo Prefecture in 1973, he decided to become a chef after spending time in hotel and Restaurants kitchens while helping out his family, who ran a chicken wholesale business. He began his career at Restaurants in the Hotel Okura Kobe. Later, he was impressed by the home cooking of a friend (from Spain) who became his colleague at a French cuisine restaurant, and traveled to Spain alone at the age of 29. He spent seven years honing his skills at a number of famous restaurants, including Akelarre in San Sebastian, before returning to Japan in 2009. In 2015, he went independent and opened Enye.

For example, for "arroz (rice dish)," he searches for domestically grown rice that is as close as possible to the authentic Spanish variety, striving to recreate it. While based on the origins, Sunada's style is to create free cocina gastronomica (gourmet cuisine) without ever being limited to it. "Ñ (Enye)" is the 15th letter of the alphabet used only in Spanish. His name is inscribed with his respect for his adopted homeland, and his infinite imagination based on Spanish cuisine blossoms every day.

Modern jazz music plays inside the restaurant. In the waiting area to the left as you enter, there are sofas and a fireplace lined up, all collected by Mr. Sunada himself, who loves antiques. The olive-colored walls are reminiscent of Spain, and the warmth of the wood harmonizes to create a stylish yet relaxed space that somehow makes you feel at ease. Not only is the food delicious, but the time you spend waiting for your food while watching the chef's handiwork across the six-meter solid wood counter made from West African assamela wood is also a luxurious experience.
