We carefully select and purchase high-quality branded pork from north to south of Japan. Using our own unique care method, we let the fish rest for several days and mature it until the fat and meat become soft. The brand changes depending on the day, but we offer the delicious pork of the day.
Service[Special frying oil and sophisticated cooking method]
We use our original frying oil, which is blended mainly with high-quality lard. Special cooking method ⇒ Slowly heat in oil from refrigeration temperature to 120℃. The batter is then fried twice at 160℃ to make it crispy. Finally, the pork cutlet was slowly rested at 50°. By frying at low temperatures of 120℃ and 160℃, we suppress oxidation, making the bread crumbs mild and the meat juicy.
