Yamayuki, an intermediary wholesaler specializing in tuna that is said to be the best in Toyosu and is a purveyor to a famous store, delivers tuna carefully selected for each season from various production areas, such as Oma, Aomori Prefecture, and Kesennuma, Miyagi Prefecture. The taste of tuna that has been aged for 10 days to bring out its flavor is exceptional. Please enjoy the taste of the freshness and high quality with the finest nigiri made with the craftsman's commitment and skill.

The interior of the restaurant, which is a renovated old folk house, has only counter seats. No matter where you sit, you can see the craftsmen at work right in front of your eyes. The ``barrel-brewed red vinegar'' sourced from Chiba Prefecture is a unique blend of two types: a rich 5-year aged type and a 3-year-old lighter type. We also work with a ``5-star rice meister'' rice store to find ``rice that goes better with Sushi'' from old rice and old rice in the region that is best suited for the season, and create carefully selected sushi that goes well with the toppings. I'll finish it. Because all seats are at the counter, you can fully enjoy the flavor of freshly made rice (shari).
