Born in Osaka Prefecture in 1974. After training at a sushi restaurant, he went independent and opened "Jinsei". It was awarded one star in the "Michelin Guide Kyoto/Osaka 2010". The restaurant's name "Jinsei" comes from Mr. Umao's alma mater, "Jinsei Gakuen" in Kagawa Prefecture. He was a member of the baseball team and played as the starting catcher at the Koshien Tournament in the summer of 1992, leading the team to the top four.

Jinsei is located in an alley just off the main street in Shinsaibashi. There are only six seats at the counter, allowing you to enjoy conversation with the friendly chef. You will naturally feel excited as the appetizers and sushi are made with expert skill right in front of you. The fish procured from the Tsuruhashi fish market are stored in a traditional cypress refrigerator. Not only does it look impressive, but it is also carefully designed to preserve the fish's flavor by storing it at the right temperature and humidity.
Food A perfect blend of Kansai and Edomae sushi culture
Each grain of rice is cooked on the firmer side, and the moment you put it in your mouth, it falls apart. Jinsei's nigiri rice, with its slightly sweet and refreshing white vinegar flavor, harmonizes with all the toppings. Not only does it offer the deliciousness of the fish itself and the careful preparation, but the delicate knife work makes it a dish that can be enjoyed by both the eyes and the tongue. Two types of nigiri are used depending on the topping, further enhancing the flavor of the ingredients. You'll want to enjoy it with some fine sake while watching the craftsmanship up close at the counter.
