Freshness is the deciding factor, and we carefully source seasonal seafood, including tuna from Tsukiji and Yamasachi. In addition, the “Ryu no Hitomi” rice used for sushi is a high-quality brand rice from Gifu that has large grains that are easy to unravel. A dish that is said to be difficult to cook evenly, has been cooked deliciously using craftsmanship. For seasoning, we used specially prepared red vinegar to bring out the flavor of the ingredients while bringing out the flavor. Our rice is Ryu no Hitomi, which is approximately 1.5 times larger than Koshihikari rice and has an outstanding flavor and aroma. It is a valuable rice that is difficult to cultivate, limited in quantity, and can only be handled by authorized dealers. Additionally, the water supply rate changes depending on the daily temperature, humidity, and water temperature, making it difficult to cook, so there are only a few restaurant that carry it. Please try our luxurious sushi made with our proud sushi rice mixed with carefully prepared red vinegar.
