We work to reduce food loss by using safe and secure vegetables received from contracted farmers using various techniques, even those parts that would normally be thrown away.
In order to protect ocean resources, we purchase fish without specifying the species. In addition, the main dish uses wild game that has been exterminated as a pest.
Each course includes one vegetable-only dish that does not contain any animal products.We also offer a vegan course that does not contain any animal products from start to finish.
Based on the idea of local production for local consumption, we purchase seasonal ingredients mainly from the Kansai region, contributing to the reduction of greenhouse gas emissions.
