After shopping at Harukas, I decided to eat hitsumabushi on Restaurants floor for dinner. Apparently they only use domestically produced eel! An elegant and light flavor that can only be achieved by having confidence in the ingredients. It's quite mild, so if you imagine a rich eel sauce when eating it, it might be a bit unsatisfactory. The soup stock was light and the eel was fluffy! The pickles had a strong taste, so they were a nice accent. It was my first time to eat liver soup, and it was very delicious! The liver has no taste and the soup is elegant and full of flavor. It was great to be able to eat high-quality eel made by a skilled craftsman.
