We offer two types: Kishu duck from Wakayama Prefecture and Magret de Canard from France. A soup stock made with several types of dried sardines, dried sardines, and homemade Kasei, such as Rishiri kelp and dried bonito flakes from Hokkaido, and a hotpot where the elegant fat of duck meat melts, and fresh vegetables such as mushrooms, burdock, and white onion. Adding it will further enhance the flavor. We also offer a variety of condiments such as Kujo green onion paste, black pepper, coarse chili pepper, and black shichimi, and at the end of your meal, you can finish off your duck hotpot with smooth-tasting soba noodles.

We use breast and thigh meat from Shiga Prefecture's ``Ami Jidori'' chicken, which has a light fat but still has a strong meat flavor.
