念願叶って、よし佳に行けました。
噂はかねがね聞いていたのですが、それを聞かなかったことにして自分の目で確かめなくてはと。
初見は、外観、店内ともに高級な造りはなく、入りやすいお寿司屋さんといった印象です。それがまたいいのかもしれません。
でも、常連さんや味にうるさい方々が客層なのは一目でわかりました。
カウンター７席、座敷５、６人を一人でさばきながら、しっかりとお客さんとも会話をかわし、お弟子さんにもびしばしと指令と激を飛ばす。
すっごいなぁこの方は。と恐れ入りました。
私のような、けつの青いコドモにもきちんと他の人と同じ対応をしてくれること。サービス業として、一番大切なことを心得ていらっしゃりました。
さて、気を取り直してお料理の方へ（笑）
とにかく、つまみの量が多いのと、そのひとつ一つのレヴェルの高さ。
握りに行く前に、お腹いっぱいになりました。
８～１０品くらいはあったと思います。
最初の方は感動でシャッターを切ることさえ忘れていました。
最初のタコ（煮）で、出鼻をくじかれました。
どうしてこんなに柔らかく美味しく煮れるのか。神業です。
きちんとお料理の説明もしてくれること、嬉しかったです。
お寿司、日本料理では御法度と呼ばれる香辛料をあえて使っていることも独自のスタイルを貫いている要因なのかなと思いました。
全体的に言えることは、香りに、もの凄く神経を使っているのでは、、、。と素材とその作り方の手法もさることながら、口に入れる直前にふわっとする香りが全てのつまみに共通してありました。それぞれ一つ一つ違う香りなんですが、素材にあった匂いを知り尽くしているんだな。
つまみ（割烹）だけでもやっていけるのではと思えるぐらい、感動でした。
そのお陰で握りが霞んでしまうぐらい。
お寿司はちゃんと美味しいんです。
でも おつまみ＞握り に思えてしまいました。それだけ立派。
そして、握りも８カンくらい出てお料理だけだと８０００円くらい。
飲んでも一人１万２，３千円。
あり得ない料金設定に脱帽しました。
私には滅多に行けないお店ですが、是非とも通い詰めたいです。
