地元の食材を最上の形で提供して頂けるご家族で経営されているオーベルジュです、熊は息子さん達が猟でとってきたものをご自身で捌かれているようです。メインの鍋ではじめていただきましたが、甘くて美味しい脂でした。お出汁はご夫婦で研究されている発酵食品のお出汁で、こんなの言うと怒られそうですが、めちゃくちゃ美味しい優しい中華そばの出汁の感覚でした。全てのお料理、何の臭みもなくビックリするくらい美味しかったです、鮒鮨は正直まだ正解がわかってないです、個人的にはもっと魚感が欲しいのかも？
