地元の知人の方紹介で初来店。とにかく地元の地魚が美味しいらしい。
今回は、沖メバルの昆布締めの刺身でスタート。はちみつを落としたという甘い醤油でいただく。
焼き物として、せっかくなので500グラム超の方ノドグロと、同じく700グラムの甘鯛を塩焼きに。
ノドグロは、大将曰く「刺しの入った絹ごし豆腐」とは上手い表現。上品な脂がたっぷりとあり、すこぶる美味い。それに比べると甘鯛はもう少し身がしまって、脂の味ではなく身の味がある美味い。どちらもそれぞれの旨さがよくわかる。
魚を突き終わると？女将さんが骨やアラを回収して吸い物に。これもまた美味い❗️当に鮮魚の醍醐味だろう。
御歳72歳の大将は、若い頃中野に住んで東銀座で修行していたそうで、いろいろ話しが盛り上がった。釣りが好きな大将の、愛情がこもった魚の調理法を楽しく拝聴しました。
