大注目のお店！！！
2024年の3月にゴ・エ・ミヨ2024 受賞したお店です。静岡駅北口からタクシーで1メーター圏内の場所にあります。以前から気になっていたお店で1人でお邪魔させていただきました。カウンター、個室の間取りになっていて店の雰囲気も非常に落ちついていました。フレンチと炭火焼きを融合させた料理は、シェフが一品一品独特のアレンジを提供してくれます。他の店では食べることのできない組み合わせが多く、素材の味を存分に堪能できます。食材はシェフが産地から直接仕入れているようで、旬の食材をアレンジして提供していただけるのも季節感があり魅力の一つだと思います。発酵食材にもこだわってどれも非常に深みのある味で美味しかったです。都内だと4、5万する様な料理のクオリティでコストパフォーマンスを考えても大満足でした。接客も1人1人に気を遣っていて丁寧に対応しており、ワインソムリエも在籍していてお酒の種類も豊富で食事と合う組み合わせで提供していただきました。将来的に百名店を取ると予想しています。今は食べログの評価数が少ないお店ですので行きやすいチャンスの時期だと読んでいます。ゴ・エ・ミヨ受賞によりこれからますます予約が困難になるお店となると思いますが、空いてるときにまたお邪魔させていただきます。

前回食べた抜群な好印象が忘れられず2ヶ月連続でお邪魔しました。今回はランチで利用しましたがディナーとのクオリティーは同じで高い技術で料理を提供していただき満足しています。今回は、食材についてシェフにお聞きしたことを記載します。ジビエを使うこちらのお店には専属のハンターとの繋がりがあるようで鮮度高く提供できるようです。なかなかここまでこだわれるお店も多くないと思います。他にもこだわりがたくさんあるお店ですので毎回少しずつご教授していただき食文化のその先に私を導いて下さい。また近々お邪魔させていただきます。
