銀座で予約困難店の日本料理『井雪』さんへ初訪問。写真NG、住所非公開。料理は少量だけど品数が多くて凄い満足度高く美味しかった!!

花山椒を1年分買っているらしくどの時期でも
花山椒が頂けるというなんとも嬉しいこと。
そして京味の伝統ともいえるハラスご飯が
最強に美味しかった…。
このメニューの品数を見ても多いけど
ちょうどいい量でサラっと完食できちゃうくらい
軽いんだよね。しかもどれも消化良さそうで
太らなさそうな!!

First visit to Iyuki, Japanese Cuisine in Ginza that is difficult to book. Photos of food are not allowed, and the address is not disclosed. The variety of dishes is huge, and the taste is so delicious that it leaves you feeling very satisfied. Winner of the Tabelog Award 2024 Bronze, and one of the top 100 Japanese Cuisine. The restaurant is located just a minute's walk from Ginza Station. There are seven counter seats, and opening hours start at 6pm. The chef trained at the famous Kyomi for 13 years before going independent. While retaining the traditional cuisine and flavors of Kyomi, he has established his own unique Iyuki style! Visit date March 29, 2024 [selection course] ・Soup with yuba and white miso ・Sea bream with sesame dressing and steamed rice ・Ink rice cake rolls and marinated firefly squid ・Hairy crab and potatoes ・Thin beans ・Omi beef shabu shabu shabu with sansho pepper ・Chawanmushi with whitebait ・Assorted tempura ・Sashimi with sea bream, puffer fish and Tempura ・Soup with ainame and shrimp shinjo ・Young sweetfish from Lake Biwa ・Deep-fried tiger puffer fish ・Palate cleanser ・Bamboo shoots and wakame ・Thin beans and bamboo shoots cooked rice ・Belly rice ・Warabi mochi This was my second visit and it was very, very delicious again this time! Personally, I love thin beans, and the broth was gentle and full of flavor, so it was delicious. The final dish was also rice cooked with the same thin beans and bamboo shoots. It was the best! Apparently they buy a year's supply of sansho pepper, so it's great that we can enjoy it at any time of the year. Everyone I was with was amazed at how delicious it was!
