立ち飲みの席の背後に四人の座り席があり、ここではコース料理を出してくれる。
友人が面白いからと言って連れて行ってくれたお店。
凄すぎて、嬉しくなった。
回転率で勝負するタイプの居酒屋で、料理のクオリティは居酒屋や和食屋というよりは日本料理のしかも素晴らしく美味しいお店。
器は荒物、汎用品ではあるがなぜか織部焼が多く出されるし、おーっ！これはわかっているなー。というお店で、安いからと言って満足度も低くならない。立って食べている人たちだって味は美味いって認識しているのだろう。変に長居する人たちもおらず、僕らもその意識はしっかり持って食べる時間が超過しないように気を遣った。
来ているお客は、お客という立場よりはむしろ参加者でカウンター越しに座り席に出してくる皿はカウンターの立ち席の人が身を避けるか、手渡しリレーしてくれるしか受け取る方法が無い。そんな客なのか参加者なのかわからない雰囲気がますますこの店の魅力を強化している。
場所は銀座8丁目だから、まあ、いわゆる新橋で。
客は外国人も、日本人も、カップルも、グループも。という感じ。
料理のクオリティが凄まじく高い。シュチュエーションを変えたりすれば15,000でもありだし、20,000円でも取れる料理を作れる大将だと思う。でも、回転率と人時生産性、原材料原価率を考えると、こちらの方が数段儲かりそう。
何者だ？と思って調べたら、まず運営は俺のシリーズの会社だと…。坂本さん亡くなった今も隆々とやっている。なるほどー。そりゃすげーわ。
料理の方は幸村で働いていた島田さんという方らしい。すげ〜やつ引き抜いて来たんだな。料理人として独立目指してやり遂げる期間設定さえできていれば、これもありだろうな。と思うと同時に、…ではこの女将然としてたっている笑顔がまさにこの辺りにピッタリの女性も配役としているわけかー。実力のある若い旦那と二人で立ち飲みやってんのかと思ったら、仕掛けのクオリティが高いわけだ。と気付いて、これまた感心。すげ〜わー！
