ChefMr. Kota Sasaki (Kouta Sasaki) - Young second generation inheriting the taste of the first generation
"Ginza Shimada" opened in January 2012. We pride ourselves on being able to casually enjoy seasonal dishes made with seasonal ingredients at low prices in Standing bar style. Mr. Sasaki, a young second-generation chef, visits Tsukiji every morning to select the freshest ingredients of the day and assembles the daily menu.

The interior is a small space with 10 standing Standing bar seats and 4 table seats. However, there is a brightness that doesn't make you feel that cramped. As soon as the store opens at 5 p.m., the counter seats are buzzing with activity, and on weekends there can sometimes be lines. The restaurant aims to be ``a kappo restaurant that even women can feel free to stop by'' and has a reputation for its friendly and warm atmosphere that even young people can relate to.
Food Luxurious delicacies made with generous use of high-quality ingredients
``Ise lobster jelly'' is made by making a jelly made from lobster stock and pouring it over sea urchin.It is a dish rich in the concentrated flavor of lobster and the rich flavor of sea urchin. The famous ``karasumi soba'' is sprinkled with so much karasumi that you can't even see the soba noodles. The combination of fragrant soba and karasumi is a masterpiece that can also be enjoyed as a snack. In this way, you can casually enjoy authentic Japanese Japanese-style meal made with generous amounts of high-quality ingredients, along with sake and wine from domestic wineries.
