洗練さとバランスの取れた割烹
久しぶりの割烹。割烹は徳うち山さん以来。銀座一丁目の裏路地にひっそりと佇む。地下へ通じる階段を降りると、綺麗なエントランスがお目見え。この辺りの演出が◎
この日は２００００円（９品）のコース。
先付、八寸、お椀とどれも基本に忠実かつ堅実なお仕事ぶり。夏の割烹らしく、随所にさっぱりとした演出が見事。特にお椀のすだちの使い方が絶品でした。
ビールで乾杯からの日本酒へ。ここで、おちょこを選ばせてくれる。しかも、選ぶおちょこの中に当たりクジ付き。残念ながらハズレだったけど、店主との会話もはずむ粋な演出。
日本酒のラインナップのなかなか。十四代がお目見えしたのは嬉しい限り。
盛り付けも鮮やかで素晴らしい。カウンターの上には常連さんの名札がぎっしり。
シメの土鍋ご飯は、余ってしまったのでお持ち帰り可。なんとも嬉しい。
敷居が高そうにみえて、そんなことはない。店主の心意気が嬉しい。
洗練さとバランスの取れた割烹。味も確か。また近く利用させていただきたい

３年ぶりの銀座よし澤さん。この前、六本木のよし澤さんに行ってきたので、違いなんかもわかるかもと思い入店。
風情を感じる入り口が良いです。銀座のオフィス街のど真ん中ですが、こういう演出は素晴らしい。
食前酒から前菜にウニと海ぶどうを添えた一口鮨。海ぶどうが初夏を感じる演出。続いて椀もの。鱧のお椀にスダチが爽やか。よし澤さんの椀ものはほんと上品で美味しい。
続いて八寸。盛り付けが美しい。そこからの鮎の塩焼き。
初夏のオンパレードです。
〆の炊き込みご飯も美味い。食べきれなかった分は持ち帰りにしてくれる粋な計らい。
奇をてらうことなく、基本に忠実な正統派の割烹。
安定感抜群でした。
