ChefRyusuke Yamane - A breath of fresh air for the next generation of sushi chefs
Born in Chiba Prefecture in 1979, he aspired to become a sushi chef in order to realize his childhood dream. After graduating from culinary school, he trained for eight years at the famous Edomae sushi restaurant "Ginza Kyubey". He then honed his skills, including working as manager at "Ginza Sushiichi", before going independent. In July 2015, at the age of just 36, he opened "Sushi Ryusuke", which bears his name. He strives to create a "restaurant where you can enjoy eating", and his friendly personality and unpretentious service have charmed many guests.

Believing that "doing the same thing as everyone else is boring," chef Yamane's concept of "fun sushi" is something quite different from the typical concept of a sushi restaurant, and attracts many guests. His greatest pride is the carefully selected tuna caught in fixed nets. With his skilled craftsmanship, he transforms the rich flavor of the tuna, which stands out with its delicate taste, into exquisite nigiri. He also serves sake snacks made with rare ingredients that cannot be found in conventional sushi restaurants, such as flounder appetizers generously sprinkled with truffles.
