We purchase fresh seasonal fish, including raw bluefin tuna, from the market every day. In addition to our signature sashimi, we also offer cooking methods that bring out the maximum flavor of the ingredients, such as grilled fish, boiled fish, and sake-steamed fish. Please enjoy it with our carefully selected sake.

We use ultra-thin dried bonito flakes shaved with a special machine, and enjoy the Kirishima pork by dipping it in the finest soup stock that includes Hidaka kelp, mackerel flakes, and dried shiitake mushrooms. The vegetables are also plentiful.

The owner, who is well versed in Japanese sake, carefully selects and purchases sake from all over the country. Edwan's original Junmai Ginjo sake, brewed in Minato Ward, Tokyo, is a refreshing sake that enhances the flavor of your dishes.
