The soba noodles, which have inherited the traditional taste, are characterized by their smooth texture and rich aroma. They use the highest quality domestic buckwheat flour and knead it with a foot-stomping method that has remained unchanged for over 120 years since the restaurant was founded. They also pay special attention to the soup stock. They use two types of bonito flakes, one of which is a specially ordered thick-shaved dried bonito. They are proud of their traditional rich flavor, which is boiled for nearly an hour. Yabukyu's soba noodles are "soto-ni soba" noodles that inherit the Edo tradition, and contain more buckwheat flour than the general nihachi soba noodles, allowing you to enjoy the flavor of the soba noodles even more.
