伝統の味を引き継いでいる蕎麦は、のどごしがよく香り豊かなのが特徴。国産の最上級のそば粉を、創業120余年前から変わらない足踏み製法で打ち上げております。また出汁にもこだわりが。鰹節を2種類使い、1種類は特注の厚削り本枯鰹を使用。1時間近く煮出した伝統の濃い目の味が自慢です。やぶ久の蕎麦は江戸の伝統を継承する「外二蕎麦」で、一般的な二八よりもそば粉の量が多いので蕎麦の風味がより味わえます。
